My contribution — something sweet for when the cravings hit:
Protein Cookie Dough Bites (makes ~20)
- 200g chickpeas (tinned, drained and dried)
- 2 scoops vanilla protein powder
- 3 tbsp maple syrup
- 2 tbsp almond butter
- 40g dark chocolate chips
- Pinch of salt, splash of vanilla
- Blend chickpeas until smooth, mix everything, roll into balls, refrigerate
- Per 2 bites: ~110 cal, 8g protein
They taste like actual cookie dough and you cannot tell there are chickpeas in them. My husband eats them and has no idea they're "healthy." 😏
